Cold, winter days have me feeling like something warm and filling. So for dinner tonight, I decided to make a delicious creamy, tomato and bacon pasta. You just can’t beat a homemade pasta sauce – yes, I'm totally guilty of buying a jar of sauce when I’m feeling lazy but there's something so much more satisfying about making it yourself. And this recipe is so easy there’s really no excuse not to!
Ceri’s Creamy Tomato and Bacon Pasta
500g Gluten Free Gnocchi (this is just one of my favourite pastas – can used whatever you want)
180g bacon, chopped
1 small onion, chopped
400g can Wattie’s Tomatoes with roast garlic and onion (or any can of tomatoes)
½ packet Tatua Crème Fraiche
2 tablespoons sun-dried tomato pesto
Couple of basil leaves, chopped
Grated parmesan cheese (to taste)
Fry bacon until starting to brown. Remove from pan and drain on paper towel. Using the same pan (drain any excess bacon fat but leave a little) cook onion until soft. Add the can of tomatoes and cook until soft.
Meanwhile, cook the pasta following packet directions.
Add the cream, tomato pesto and bacon to the tomatoes and cook until heated through. Remove from heat, add basil and parsley and stir through the pasta. Serve with grated parmesan. Enjoy!
This really hit the spot, curled up on the couch listening to the rain. Winter comfort food at its best.
